Farmhouse Fruitcake recipe

A spring show favourite, the Horticultural Society walk you through their favourite recipe for a springtime classic!

You will need:

  • 8 oz (227g) self-raising flour

  • 4 oz (110g) brown sugar

  • 2 eggs

  • 12 oz (350g) Mixed dried fruit

  • 4 oz (110g) Butter

  • 1 level teaspoon mixed spice

  • 1/4 pint (150ml) water

Method:

  • Preheat oven to 325F / 170C / Gas Mark 3

  • Line and grease a 7 inch round cake tin

  • Place fruit, butter, sugar and water in a saucepan

  • Bring to a simmering point, simmer for 20 minutes, stirring several times to prevent sticking

  • Allow mixture to cool for half an hour

  • Add sifted flour, mixed spice and beaten eggs, mix thoroughly and pour mixture into a the tin

  • Bake centre shelf of oven at 325F / 170C / Gas Mark 3 for 30, before reducing the oven to Gas Mark 2 / 300F / 150C and cooking for a further 1 1/2 hours

  • Cool cake in tin for 15 minutes before turning out onto a cooling rack
